Guida la cucina del ristorante gastronomico, la Tavola, a Laveno Mombello, all’interno dell’albergo di famiglia, Il Porticciolo. Inizia la sua ascesa da Davide Oldani, per passare poi alla corte di Sergio Mei, nelle cucine del Four Seasons di Milano. Poi parte per la Francia dove lavora all’apertura sugli Champs-Elysées del famosissimo Atelier de Joel Robuchon, che a 6 mesi dall’apertura si guadagna 2 stelle Michelin.
Cucina anche a Le Maurice, sotto la guida di Yannick Allenò, fino a sbarcare al Sur Mesure del Mandarin Oriental Palace di Parigi. Qui incontra Thierry Marx, che crea una brigata di ragazzi allo stesso livello, dove tutti collaborano per creare i piatti che compariranno sul menù. Anche qui, dopo appena 6 mesi, le due stelle Michelin arrivano senza attesa. Poi nel 2012 la volontà di tornare nel locale di famiglia. Il 2016 è l’anno d’oro per lo chef che partecipa alla selezione italiana del Bocuse D’Or e si vede cucita sul petto la sua prima Stella Michelin.
